Yes, I can go to cooks.com to see how to prepare eggplant, but I have played one too many chess games, and I want to hear how CHESSPLAYERS prepare eggplant. My method so far is to cook in light oil,first dunking in egg batter, and then breadcrumbs. All Im asking, is if you have a favorite way for making eggplant, that will taste just as good as this. Thanks to all respondents.

Preparation: Directions for fried eggplant Peel eggplant; cut in strips about 1/2-inch wide and 3 inches in length. Place eggplant strips in a large bowl, cover with water and sprinkle with 1 teaspoon salt. Let soak 1 hour; drain and pat dry with paper towels. Combine flour, salt, baking powder, Italian seasoning, onion powder, cayenne, and garlic powder in a mixing bowl. Add beaten eggs, milk, and 1 tablespoon vegetable oil. Beat until smooth. Heat oil over medium heat until hot. If deep-frying, heat to about 365°. Dip dry eggplant strips in batter, let excess batter drip off; fry eggplant strips in batches in hot oil until fried eggplant is golden brown. Fried eggplant strips serve 4 to 6. One should not grow it , or buy it at a store. IT should never be allowed into your home. If it somehow makes it into your kitchen...take a meat cleaver and kill it! Cube it into a ratatouille...or slice it onto your pizza? Then throw them away! ):

Jack, i basically laughed my head off for a minute, you have a fantastic imagination, a sign that you will live past 80, which makes me sad, because that means you probably have no eggplant in your house! I had some saturday, and if it were not for such nice folks as white lightning and DOORMAN, I would probably starve to death, because I am divorced , and do not have anyone to take care of me, so I sort of play a game, and pretend I can count on chessplayers. But I do hope you and many others have the benefit of a significant other. Who CAN cook you eggplant if you should ever desire. I may buy a bebe gun, because I am noy of a bloodthirsty nature, and would only want to wound eggplant but not KILL.

Do it thoroughly, until the skin hardens, and the plants look lighter. Be careful, do not burn them! When they’re done, take them from the fire and scoop the meat out of the skin( it should look white-ish/grey-ish and soft). Let the meat strain for 2 hours such that the liquid ( it looks like oil) is completely out of the plant and chop them finely. Take a medium-sized onion and chop about half of it finely. Incorporate the chopped onion with a little bit of oil in the eggplant ( 3-4 tablespoons of sun flower oil preferably) . Do not use a mixer. Lightly stir /whip with a fork until the oil is not evident anymore ( somehow like when preparing mayo). Add some salt. Taste each time .( Do not make it look or taste oily) It is better to be served with sliced red tomatoes ( heirloom preferably),nicely displayed around the plate.
